These delicious muffins are easy even for kids to make. Make 12 big muffins or 24 mini muffins. Mini muffins can be decorated with chocolade and banana’s slices.
2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 cup butter
2 eggs
3/4 cup milk
1 cup fresh blueberries
1 banana, sliced and grated chocolate for decoration mini muffins
Preheat oven to 375 degrees F.
Stir together flour, sugar, salt and baking powder in a mixing bowl. Combine beaten eggs, milk, melted butter. Mix with flour mixture. Fold in blueberries.
Fill muffin cups right to the top.
Bake for 20 minutes in a preheated oven, or until golden, or until a toothpick inserted in the center of a muffin comes out clean.
Let the muffins cool before taking them out of the pan.
These muffins could be frozen for later use and then re-heated in a microwave.
